Banana Pancakes

Serves 2

Ingredients:

2 large ripe bananas

2 large eggs

1/2 cup ground almonds

1 tsp baking powder

coconut oil or butter for frying


Method:

Pre-heat the oven to warm (about 50-75oC).


Mash the bananas with a fork until no lumps remain. Beat in the eggs and add the ground almonds and baking powder. Mix well until the batter is smooth.


Heat a large frying pan with 1 tsp of coconut oil or butter.


Drop spoonfuls of the batter into the hot frying pan. Cook for 3 minutes and the flip the pancake, cooking for another 1-2 minutes.


Place cooked pancakes on a plate in the warm oven while you cook the rest of the batter.


Serve with fresh fruit, some coconut yoghurt, chia seed jam and some freshly chopped mint!
